Rick Spencer is the proprietor of the Jerky of the Month Club. The Jerky of the Month Club was started more than twenty years ago in our family owned meat packing plant in Steamboat Springs Colorado.
My father Keith Spencer, originally came to Steamboat in 1952 as a meat cutter at a local grocery store. In 1968, he and my mother Darlene went in to business on their own by purchasing the local packing plant. I was ten years old at the time. My older brother, younger sister and I worked many summer days, and after school making ice, "salting" and racking jerky, and cleaning up. I left for college after high school, but missed "home" and returned to help my father in the business.
As the town grew, our business did as well, We developed many gourmet sausages and Jerkies in our USDA Plant, winning many State smoked meat awards. We found ourselves trading more with second home owners, and they often requested we send our handcrafted jerkies to them.
Our family continues the tradition to this day, and offer a variety of flavors shipped with our newsletter to the lucky recipient. Jan my wife is office manager, book keeper, and covers all the other bases when needed. Daughter Katie is production and shipping coordinator, and my older daughter Jenny writes the newsletter.
